Extract from the book
Who makes soup these days when there are so many varieties available in the supermarkets that only need re-heating?

I do, because there is no comparison between the home made and pre-prepared versions. Home made soup is luscious, thicker and altogether tastier. If it’s cooked in a microwave oven, it will also be bursting with nutrients.

All soups and pâtés cook perfectly in a microwave oven, though they often take as long to cook as they do on the top of the stove, due to the pasta or rice in them that needs re-hydrating during the cooking process.

However the end results are always excellent, there is no direct cooking source, so the bottom of the dish won’t burn - which is great for all those creamed soups. If the timer finishes and you have to leave the room, the soup won’t boil over, - it will be at the same stage as when you left it, so just give it a stir and carry on.
